Description: Lambik aged on freshly emptied old sherry barrels (at least 40 years old). Poured on several occasions and events, while emptying the barrels for bottling. ---------- In 2013, we were quite lucky to get our hands on some exceptional Pedro Ximénez and Oloroso sherry barrels - each at least 40 years old - and having contained some of the finest authentic sherries in the world. We decided to apply the "solera" method, typical to the Spanish Jerez de la Frontera region. By doing so, the actual weighted average age of the sherry lambic is now 54 months or 4.5 years. From the 12 initial barrels, we have selected one barrel for this Oloroso lambic. It will be / is poured with the Toer de Geuze 2017, in limited amounts. No panic... this beer has little to no carbonation - it’s normal!
