Description: This bottling of the Seven comes from one of our favorite casks, where it matured for exactly fifteen months. The fresh versions of the Seven combine select hops with our house saison yeast to produce a character we like to call "greenhouse". In this release, that character is transformed by light use of mixed citrus peels, fresh calendula, and apricot, which replace most of the hop component that's faded while also providing a pleasant contrast to the wine and oak notes imparted by the cask. 107 bottles. Back label: "with apricots and mixed botanicals"
