Description: In collaboration with Council Brewing we took a new approach to IPA. A portion of this beer was soured to produce a light kiss of acidity, followed by a generous dry hop of Mosaic, Hallertau Blanc, & Amarillo, resulting in aromas & flavors with juicy notes of overripe papaya, white grape, peach, and mandarin orange. Cool fermentation with an East Coast yeast contributes stone fruit esters that complement the acidity and bright hop notes.
