Il saraceno viene maltato da una piccola malteria e tagliato con malto d'orzo e grano Senatore Cappelli.La Saracena è una birra prodotta per sfruttare il valore nutritivo e il caratteristico aroma di questa interessantissima pianta. Dal colore dorato e dalla leggera velatura, ha una buona schiuma chiara e compatta. Rilascia piacevoli sentori di cereale e di lievito. Al contempo esplodono freschi richiami erbacei. Alla bevuta si chiude, mostrando un'impressionante freschezza e bevibilità.
