Description: Earlier this year we invited Chris Black from the legendary Falling Rock Taphouse in Denver to come in and create a specially blended beer. We sat down and tasted through barrels until we had a blend we all loved. After selection, we let this 3 year, 100% spontaneously fermented beer rest in french oak with a light touch of Hallertau Blanc hops. The result is a funky and dry beer with notes of sauvignon blanc and lemongrass. Lightly bitter with driving acidity we recommend this beer be drank fresh, however cellaring will produce unique results.
