Description: Inspired by Nick and Kristen’s daughter, Cassidy, this farmhouse-style ale was brewed with spring flowers and matured in Sauternes wine barrels with a select strain of Brettanomyces. It is produced using a solera blending system, where each year contains a portion of all previous years. This technique means that the average age of the beer in a newly-released Cassidy gradually increases year after year—producing an evolving character that comes into its own more with each new release. 2016 Cassidy demonstrates this with a more refined balance than 2015. It's a beautiful beer visually, featuring a burnt orange hue that's inflected with a subtle pink from the addition of wildflowers during the brew. Cassidy's aromas include citrus, chamomile, oak and rose, transitioning to flavors of white grape, vanilla, tea, and plum. A light, zippy body and tart acidity create a finish that is both refreshing and complex.
