Description: Nocturne is a one-off brew; brewed the 25th of March 2015, the mash bill comprises a varied selection of dark malts without any addition of wheat. For the rest, the principles of lambic have been respected: addition of old hops, spontaneous inoculation, barrel fermentation and maturing etc. At Brouwerij 3 Fonteinen, we believe that within the frame of lambic tradition, there is potential to further innovate with aromas and flavours e.g. through the use of specific barrels for lambic maturation, or even to go back to old processes or local ingredients e.g. fruit maceration in the wooden barrel itself. “Speling van het Lot” | “Twist of Fate” indicates our small-scale projects that we want to share with our visitors before making some more...
