Op 20 maart 2018 vulden we twee vers leeggemaakte vin jaune vaten van Domaine Pignier met jonge 3 Fonteinen lambik. De lambik werd gebrouwen op 16 maart 2017 en was 13 maanden oud bij het vullen van de vaten. De lambik bleef gedurende een dik jaar op de vaten voordat we ze afzonderlijk afvulden op fles. Zodoende zijn er twee blends van deze pure vin jaune lambik. On March 20th 2018, we filled two freshly emptied Vin Jaune barrels of Domaine Pignier with young 3 Fonteinen lambik. The lambik was brewed on March 16th 2017 and was 13 months old upon filling the two barrels. We let the lambik sit for another good year before we bottled seperately. As such, there are two batches of this unblended vin jaune lambik. Brouwerij 3 Fonteinen “Speling van het Lot” (Twist of Fate) is a series of small batch experimental brews, barrel maturations, fruit macerations and/or blends.
