Description: Niche is the almighty gift of creativity. And we applaud those who find their own. For Salud Cerveceria's grand opening, we decided to pay homage to those things that will make this fantastic brewery so special. This brew starts with Carolina 6-Row Barley and Seashore Rye from Riverbend Malt, Lime Peel and Sea Salt in the kettle, and is fermented with a mixed culture of brett and lactobacillus. We then fire-roasted 100 lbs of limes in the wood ovens at Cucina 24 and started a second fermentation. After several weeks, a third fermentation was initiated when we added agave sugar to the beer. Naturally carbonated through multiple fermentations, the beer is rife with diverse lime and pastry aromas, while being rounded by a mild salinity.
