Description: From the buried terra-cotta qvevris, Levity is very palate filling with substantial astringency, orange and passionfruit flavors, and fresh acidity. This vintage features a wild yeast, slow ferment with aromas of orange oil, lime zest, and pear. We settle in the bottle before fermentation completes and allow it to bottle condition, producing natural carbonation and development of a richer mouthfeel from aging on the lees.
