Description: Blend of Barrel Aged Wild Ales w/ Organic Apricots. This third batch (like the second) was blended exclusively from our stock of "Lambic Inspired" wild ale brewed with house aged hops, floor-malted pilsner from Admiral Malting in Alameda Ca, and raw Heritage Sonora Wheat from Tehachapi Grain Project; we use a long boil of 3.5 hours like the Belgians do, but it is not spontaneously fermented. We use our normal house mixed cultures.
