A unique blend of Belgian Saccharomyces and Brettanomyces for emulating the Trappist style beer from the Florenville region in Belgium. Higher fermentation temps developed phenolics, mild fruitiness and deep spicy notes. Aged by pitching with Cell Rebirth ‘strain A’ from the wild Welsh hills and ageing in Acacia wood casks.
