Description: Exit 89 Lager began with the water that we use. Our water comes from the North Anna River on the northern border of Hanover County (site of a major Civil War battle between Grant and Lee – sorry, history dork!). After filtering our water, the water is very soft and has a mineral content similar to some of the great lager-brewing areas of Europe. We use this water to mash in with four different malts. In the boil kettle, several additions of German Tettnang hops create a modest bitterness, just enough to balance with the malt. This beer is all about balance. For fermentation, we went with a great Czech yeast strain that leaves the beer clean and malty. After fermentation, Exit 89 went through a cold conditioning period (lagering) until, after numerous sampling, we felt it was ready. The beer was then filtered (on a beautiful Saturday afternoon) to remove any yeast that had not yet dropped out naturally.
