Description: Our take on a Double IPA. We took our Pollock Rip IPA recipe and half-way through fermentation we pitched Brettanomyces Clausenii. This wild yeast strain creates a dry, yet complex, beer with a higher ABV. Notes of ripe pineapple and stone fruits accented with smokey, spicy earthy aromas, and hints of barnyard.
