Description: We’ve always enjoyed drinking Belgian sour beers, the flavour complexities, funkiness and the sourness –unlike anything that we usually brew but it tastes damn good. A chance conversation with Matt Dicey at Mt Difficulty Winery revealed that some wine barrels were becoming available. Snap! The opportunity to brew a sour beer was too hard to resist, we had to do it. The base brew is a wheat beer fermented with a German ale yeast. Once that fermentation was completed, the brew was transferred to the wine barrels with a flask of an active blend of microbes to slowly breakdown the complex starch carbohydrates that usual brewer’s yeast cannot do. This type of fermentation takes a long time. We added sour cherries from our favourite grower near Maheno, North Otago, to develop background complexities. After doing time, the barrels were blended together in a tank, then bottle-conditioned. The beer is reddish in appearance with a spicy, fruity, sour aroma then malty flavours giving way to subtle cherry flavours and long lingering pleasant sourness that entice you back for more. This is a beer style that is towards wine characters, the hop flavour and aroma are not notable but they are there purely for preservative effect. This beer is best appreciated cool, served in a tulip or goblet style glass. Enjoy!
