A second fermentation of our Saison wort with wild yeast gives Funky Monkey tremendous complexity. A pleasant, sour, earthy edge with barnyard notes makes you want to party with this guy early in the morning and all night long. When the Belgian yeast strain gets funky with Brett it becomes one nation under a groove with hints of pineapples, granny smiths, and a dry-champagne finish to make this family affair out of sight.
