Description: Blackberry is from a single barrel of the first spring batch in 2019, a traditional spontaneous brew where we replaced the wheat component of our grist with unmalted NJ buckwheat. At eight months, the beer was racked onto NJ grown blackberries for a one-week cold maceration before being racked back to barrels for an additional seven months of maturation on oak. We then laid the beer down in bottle for an additional 13 months. Upon release, Blackberry will be 28 months old. The blackberries bring a violet color with notes of juicy, brambles and raisiny jam in both the aroma and flavor. The base beer maintains the apricot and stone fruit profile of our spontaneous fermentation with the addition of subtle buckwheat derived aromatics.
