Description: The Foxen Winery has been producing exceptional wines on the Rancho Tinaquaic property in North Santa Barbara County for over 30 years. In 2014 we accepted Foxen’s invitation and decided to collaborate on making a Beer/Wine hybrid “champagne”, a product uniquely rare to both of our worlds. Under the guidance of winemaker Bill Watham, River Bench Pinot Noir grapes were selected, crushed under foot and then co-fermented in our French oak barrels with a blonde beer base. Bottled in 2016, the beer rested on the lees for an additional two years and underwent a series of riddling before being disgorged and finished in 2018. The result is nothing less than stunning. Notes of funk and fruit mingle with brioche. A refined carbonation dances on the tongue. The color exhibits a pink/salmon hue. To be savored and shared with friends. Santé!
