Description: Feral Vinifera is our foray into a new and exciting adventure in the Santa Ynez Valley, that expresses our collaborative efforts with local grape growers and winemakers. Its journey begins with the sourcing and pressing Grenache Gris grapes, co-fermenting the juice with sour mash wheat-based wort, inoculating with proprietary wild yeast and bacteria, and allowing for a long fermentation and maturation in oak barrels. We have carefully created this beer with the collaboration of our friend, Sonja Magdevski, proprietor/winemaker at Casa Dumetz Wines. The resulting cuvee bends the mind and senses. Funky yeast, toasted oak and cereal notes lay down a firm foundation. Tart acidity and soft tannins lend body and structure. A bouquet of ripe strawberries dipped in white chocolate tantalizes the olfactory.
