Description: Seekers started as spelt beer brewed in the first week of April 2017. It was fermented in a 400L puncheon for a few months. In September we took some freshly pressed Chardonnay which had originated at Boushey Vineyard in Yakima (where we took Marsanne that year also). We had no extra vessels available at the time to make the beer, so we painstakingly shoved the skins into a puncheon and the beer was racked from one to the other and left to rest. In July of 2018 we took in a load of organic 'Rival' apricots from RAMA Farm. They were depitted and put into a tank, after which the chardonnay beer and some saison were racked on top and allowed to referment. Bottled in October, it has had six months to condition in the bottle.
