Description: Single hop farm saison We brewed the beer in early May 2021 with entirely Segal grown 2020 Cascade pellets and Anchovy flower. It was constructed of a grist of Skagit Valley Malting organic pilsner malt and True British malted Talisman, plus a variety of raw and flaked organic spelts. We hopped it in the boil with Cascade, in the hopback with Anchovy, and then dry hopped it during open fermentation with both before sending it to barrel. After the 2021 harvest we blended the beer from several of the barrels and gave it a light dry hop in tank with 2021 Anchovy pellets before bottle conditioning. Bottling date: 04/21/2022
