Description: An American style India Pale Ale, aggressively hopped in the brew kettle and later dry-hopped during aging for a full hop experience. American hops used resemble citrus or pine tree. IPA is so called from the days when shiploads of British beer were sent to expatriates in the Indian empire. To prevent spoilage at sea, these beers were brewed with increased alcohol and hops as both are natural preservatives. Slightly lower carbonation levels allow the hops and alcohol to provide more of the mouthfeel. Body and alcohol are both medium high with a copper color and a creamy white head.
