Description: Fermented in a singular french oak barrel with our Native Wild Yeast for 8 months before being racked onto fresh whole blueberries. After an additional few weeks of fermentation in oak, we met the fantastic folks over at Tumalo Lavender just down the road to grab some fresh French Provence Lavender cut directly from their fields. After just a few days on the lavender, we laid the bottles to rest and naturally condition for 6 months with our 2022 Native Wild Yeast.
