Heavy tartness is tempered by the deep malty undertones and accents of dark chocolate and toasted caramel. Complex and nuanced, this beer will challenge your notions of what a sour beer should taste like. Fermenting within the red wine barrels, mixed fermentation with pedio and brett strains, complexity of grist bill forced to work with the sour components in wonderful ways. And there were only four barrels in our cellar!
