Description: We dedicate our newest beer to Miles Davis—not the transcendent jazz trumpeter, but the cat of Niko Krommydas, a local beer writer and our good friend. This is a bittersweet collaboration for Niko. Miles recently lost a hard-fought battle with cancer, so what was initially only a sequel to Niko Weisse, a beer we made together in 2014, also became a way for us to honor the memory of a brave soul. Je Peux Voir des Miles, which translates to "I can see for Miles," is a saison brewed with pilsner and wheat malts. Strisselspalt hops from the Alsace region of France lend a slightly floral flavor, while a Belgian yeast strain from a very well-known saison brewer produces a traditional dry finish with notes of black pepper. After brewing, the final step was an aging time of 10 months in Chardonnay barrels with Brettanomyces Bruxellensis, a wild yeast that adds a farmhouse aroma and elegantly tart finish.
