Description: Flutter is a delicate and refreshing Berliner Weisse brewed with jasmine flowers and grapefruit zest. A full and beautiful bouquet--jasmine, of course, but other floral notes of gardenia and honeysuckle--garnished with a twist of grapefruit. Dry and savory with a perfectly balanced tartness--we are in love with this beer! Flutter revives the traditional method of brewing Berliner Weisse. Our five-step mash yields a "raw" wort that is never boiled. We ferment Flutter in our oak foeder with a mixed culture of lactobacillus, brettanomyces, and saccharomyces. Drink it fresh or cellar it for a year or more to develop additional complexity.
