Description: Brewed with pilsner and wheat malts, with the addition of flaked wheat and maize, this traditional saison is fremented with brettanomyces, a wild yeast that lends some 'funk' and tartness to the beer. After primary fermentation is complete, The fermenter is dosed wuth 7 gallons per barrel of tart cherry juice for a secondary fermentation. This dry, tart saison bounds with cherry flavor throughout. This beer will continue to develop for years to come in the bottle.
