Description: Heathen’s first Vancouver collab with Loowit Brewing. Inspiration came from sitting around over beers one day talking about obscure ingredients. Fennel has always been on my ‘to brew with’ list (especially after trying Oui Chef!) and Devon said he walks by a fennel patch every day on his way to the brewery, so that was kind of the first ingredient. After that we started looking into flavor affinities for fennel. We knew we wanted some sort of fruit to balance the fennel, and then an herb to bring another layer of complexity to the finished product. We landed on fresh figs because of the sweetness it would lend, and in this case, cut the acidity and tartness just a bit (fennel and lactic acid is a wild combination on it’s own!).”
