Description: Ostara is an unfiltered kettle sour Saison, co-fermented with brettanomyces, and re-fermented with guava and peach puree, aged in chardonnay barrels for just over a year. This beer underwent a turbid mash, and a 3 hour boil time a year ago. It was a pain...stuck mash, and anything that could go wrong on a brew day, went wrong. The grains were like concrete from the wheat used, but after a few curse words, the end product came out exactly what I was looking for. This is a perfectly balanced beer, full of character; subtle and amazing.
