Description: Lambic-influenced Barrel Aged Saison with Masumoto Family Farms Rose Diamond Nectarines. This beer was blended between two wine barrels that housed the Homage aged hopped Lambic-inspired base. Our goal with A Little Soul was to capture the nuances of the house wild yeast while shining light on the funky profile of 4 year old aged hops. We macerated second use Masumoto Family Farms Rose Diamond Nectarines to add a soft and juicy touch of stone fruit qualities for additional complexity. Using second use fruit allowed us to have more control over the acidity and retain the overall balance of fruit to beer. We are extremely pleased with the execution of our initial intentions.
