Description: "Moon and Stars" is an Unfiltered Farmhouse Ale that began its journey as a rustic Saison, brewed in the summer of 2019. We then aged this delicate ale for over two years in Pinot Noir barrels from Navarro Vineyards and Chardonnay barrels from Husch Vineyards. The base portion of this beer was refermented on cherries before being blended into a separate vessel. We then conditioned this funky elixir on tangelo zest, and finished the process with a light dry hop addition of Wai-iti. We proceeded to bottle condition the final product until it achieved a balanced carbonation. The result is an earthy, and lightly acidic ale that encourages one’s mind to get lost in the sky. Think fresh chamomile, lemon rinds, and natural wine.
