Description: We had smelled the pungent meadowsweet flowers growing locally, with their notes of sweet honey tempered with an aroma of antiseptic cream and a background of freshly cut grass. In the past we hadn’t been brave enough to use them in beer then we thought we would give it a go. In the summer of 2016 we had a barrel of aged sour beer that had a touch more residual sweetness than most and a well-balanced level of sourness and funk. Freshly picked meadowsweet was added to the barrel and left to infuse. After several months the resulting beer was bottled and tasted. On initial tasting it had a slight medicinal flavour so we decided not to release it but hold on to the bottles until it matured a little. We continued to taste it periodically until
