Description: We love the idea of using as many of our own local ingredients as we can in our brewing process and enhancing the flavour of our beers by the way they are aged. Our Organic Reserve was made with our own locally grown Westminster Barley and Fuggle Hops; it was then fermented with champagne- style yeast and blended with our own mixed culture of yeast and bacteria. This fermentation took place in a single french Chardonnay barrel over the course of six months, gradually maturing into a beer which we believe is pretty amazing!
