Description: OWL is our first attempt at making a true, decocted, Czech style Plsner! Our good friend and owner of Taste Local Beer, Aaron Johns brought in a unique pivo lager yeast from his favorite brewery in Prague. To this we mashed 100% floor malted Bohemian pilsner malt and did a single decoction, where we boiled 40% of the mash! This process produces an intense, yet delicate malt character of biscuit crust and grass. Hopping for the beer is Czech Saaz only! We added the hops to the boil in the traditional timing resulting in a spicy, lightly fruity flavor and aroma with firm, clean, bitterness. But really though, the only way to know is to go to the CZ, here's to the next best bet...
