Description: Introducing Barrel Aged Hop Moon, the newest draft beer at Mellow Mink. This is a single barrel variant of our dry-hopped golden sour, Hop Moon. This complex beer began with a simple malt recipe of pilsner and wheat, which then underwent a mixed culture fermentation in stainless before maturing for 9 months in a used Chardonnay barrel. Once aged, we transfer the beer back to stainless for a dry hopping with generous amounts of several citrus forward American hops. The result is a dry, complex sour beer with a blend of fruity esters from Brettanomyces, oaky tannins and white wine notes from barrel conditioning, and bright citrus aromas and flavors from dry hopping.
