Description: The fruit for Contusic Impetus (in the key of e) are beets and apples. Both were peeled, chopped and added to mature sour 85% white wheat beer. Maceration lasted 21 days, after which the beer was racked off and slices of fresh ginger root were added. The beer was allowed to mature, sour and fully ferment at ambient temperature of 72 degrees Fahrenheit. Fermentation was completed by the indigenous microbiology in the fruit and our mixed culture of local yeast and souring bacteria. One day prior to bottling, a fresh batch of our white wheat wort was brewed. The next day, freshly fermenting wort was added directly to the bottle, allowing carbonation and final fermentation to occur naturally in the bottle.
