Description: Heavily kilned Munich malt is used as a large part of the base grist to build a deep foundation of flavour. Caramunich and Special B add notes of molasses, liquorice and dried fruits to the complex burnt sugar profiles slowly developed through an extended boil. Pale roasted chocolate malt and roasted barley offer bittersweet chocolate, cocoa and coffee. A staggered pitch of two very different ale yeasts kick off fermentation with a lightly fruity English character, while a more alcohol tolerant Belgian strain is used to finish the job. Flaked oats lend a silkiness to the body and late additions of demerara sugar are used to aid a dryer finish.
