Description: Second in the Patron's series brewed in collaboration with Alefarm is a more unconventional twist a classic Saison. We started by first using a malt base comprising of pilsner malt, oats, wheat and spelt to contribute to a much thicker, creamy mouthfeel. We then added lactose which was met with some light-hearted contention between the brew team and use of lactose in a saison. Ultimately curiosity and the the idea of a beer that evoked flavours of Danish peaches and cream won overall! We used the same yeast strain for all Saisons in this series, WLP565, which contributes slightly peppery, spicy notes usually present in more classic versions of this style. Lastly, we added peach and vanilla in the later conditioning stages to bring a real juiciness to the beer that you would associate with summer ripened soft flesh fruit. The timing couldn't be more perfect!
