Description: This is our first 100% spontaneous beer, which was inoculated with the microbes found outside our brewery on January 3rd, 2018. Fermented and aged in French oak puncheons and then naturally conditioned in the bottle. We performed a traditional turbid mash with a grist of imported Pilsner and domestic raw wheat, and boiled with aged US Liberty hops. This beer delivers notes of honeydew melon and overripe tropical fruit alongside subtle notes of stone fruit, mellow funk, and soft acidity.
