After pressing, the cider is racked into bourbon barrels where the slow, steady, natural fermentation process results in unique, robust characteristics. This traditional Old Hill process is a bit wild, like cider making of old, and therefore somewhat unpredictable, but expect bright, tropical fruitiness of the reserve cider that colonial cidermakers would have kept back for their own enjoyment.
