Description: Lambic from Oud Beersel that has been allowed to mature on barrels at the blendery for two years. After about a year, the Lambic is as good as fermented out and is therefore called Oude Lambic. However, the Brettanomyces remain active and further break down the complex sugar chains. The fruitiness decreases slightly and gives way to the typical, funky ‘Brett’ character, often associated with leather, tobacco or barnyard. The 2-year-old Lambic is the perfect for those who like deeper, complex flavours accompanied by a pleasant, fresh sourness.
