Description: Late September was the peak harvest time this year for Sepp’s own hop creation, Monroe, which we were incredibly proud to showcase in the Sepp Hop IPA. This timing coincided with the harvest of two of Sepp’s brand new experimental hop varieties, as yet unnamed and never before used. We’d planned to use these three hop sorts. But everything changed on that crisp morning of September. Another hop variety Sepp had grown was finishing up in the hop processing mill; a hop by the name of Herkules. As the name suggests, Herkules has long been known as the king of bittering hops, renowned for its extreme power due to the masses of acids and essential oils.That morning as we ripped open one of the Herkules cones that had fallen from the back of the truck, we became starry eyed and speechless; the glorious aroma jumped out of the masses of yellow powder and smashed us in the face. It was incredible. We had another idea! We wanted Herkules for aroma, not for its commonly utilised bittering power. We were determined to focus primarily on the headliner, the fresh hops. Pale yellow to light orange in colour, the Sepp Hop IPA features huge wet hop aromas of danky cannabis, pineapple, berries, green grass, herbs and citrus. The mouthfeel is smooth and coating, yet crisp and dry in its finish. A medium body works harmoniously with a very balanced hop bitterness, solely from the very late whirl-pool wet hop addition.
