Description: Maximum Hijinx is our two-year old spontaneous beer further refermented on 2018 Harvest Colorado-grown Montmorency Cherries for nine-months before bottle conditioning an additional ten-months with local Alfalfa honey. This offering has been three years in the making! Maximum Hijinx pours a lovely coral pink with white head and huge floral aromatics. While very light and refreshing, don’t be surprised if this cherry offering has you tasting peach, strawberry, and cranberry all layered under an ever-changing vinous aroma. We find this beer to be incredibly dry, tannic, and pleasantly acidic with a balance reminiscent of Rosé Champagne.
