Description: This is a Syrah wine barrel fermented tart saison, that was soured with L. Delbrueckii and finished with S. Trois, then aged on El Rancho grown organic Merlot grapes. If you've ever been to that quaint stretch of road in El Rancho, then you know that all kinds of wonderful things are growing down near the acequias there. Such a cool part of what was once an agriculturally driven economy here in New Mexico. Quarters of the oak barrel were all aged on different fruits; Merlot grapes, Syrah grapes, a 1 lb/gallon sweet cherry, and 2 lb/gallon sweet cherry.
