Description: Sanctuario is our interpretation of how saison used to be, before modern large scale brewing techniques became commonplace. Sanctuario is fermented in neutral French oak barrels with our house yeast blend, to yield a delicate funk with a light tartness. We take sanctuary in this approachable ale, and hope you will as well. For this blend, we added 1.4 lb/gallon of blackberry to the barriques and allowed the beer to referment to dryness before bottling. The bulk of this was bottled for our Honor Society, but there are also some bottles they did not buy with regular labeling. We consider it both an Honor Society and public release beer.
