Style: Historical Beer - Mumme

Description: Known in a previous life as the Sea Hag Mumme, this is originally a German style beer brewed from the 14th to 16th centuries. It was widely exported throughout Europe and to particular fanfare in England where it was primarily brewed after the passage of the German Beer Purity Law, which essentially banned the style. Our mumme is based off of 16th and 17th century British recipes. What differentiates the style is its use of wheat, oatmeal and beans in the mash along with heavy spices in the boil. In our recipe, oatmeal and sprouted fava beans collectively make up 15% of the grain bill giving the beer a heavy body and a sweet finish. In the boil, we added juniper berries and cardamom pods, then rounded it off with a heavy addition of Simcoe hops, resulting in piney and citrus qualities.
