Description: Seedling is a mixed fermentation ale brewed with barley, wheat and oats, and aged several months in used red wine barrels with a mixed culture containing Brettanomyces and Lactobacillus. For this version, we infused the finished beer with Elderflowers hand-picked from the grounds surrounding the brewery. Seedling is dry, refreshing, and delicately tart, with bright notes of citrus, ripe stone fruit and wood that blend with flowery notes of Elderflower and the earthy notes given by the flowers’ stems. The relatively low alcohol content and soft, inviting mouthfeel make this simple but graceful beer wonderfully drinkable.
