Description: Our first of many collaborations with Transient! We thought everyone would want a sour from us, so we decided not to do that. This beer is born from the many pints of pilsner that Transient and Speciation drink together. We started with a malt base of Pilsner and a touch of wheat. Then we fermented in neutral red wine barrels with German lager yeast at room temperature for 2 weeks. We finished STDY with our house cultures and saaz hops! what results is a hybrid between pilsner and American Wild Ale. Fresh, this will more closely resemble a pilsner. With age it will get funkier, more acidic, and the hops will fade a touch.
