Description: When you hear how we made this beer you might say “merlot you didn’t” and we’ll respond with “yes we did!” Not only did we referment a golden sour blend with merlot grapes, we open fermented this 2 oak barrel batch. Our production team flipped 2 barrels on their heads, popped the tops off, filled them with a saison and golden sour blend, added merlot grapes and open fermented these 2 oak barrels for 4-5 days before transferring beer off the grapes and back to oak barrels to age. During this open fermentation process we did punch-downs twice a day in order to break up the thick layer of skins and seeds that formed at the surface and to submerge the grape solids to extract color, tannins, flavor, and aromas.
