Description: The Wild One - This solera aged beer takes inspiration from the lambic tradition. A 3-year-old blend of sour ale made with Brettanomyces and souring bacteria originating from Belgium’s Pajottenland and our own old cellar, Sauvageonne is aged in Cabernet Sauvignon wine barrels. Each year we bottle a small quantity from the barrels containing the oldest beer. This beer is aged in our old cellar where, in the dungeonous basement, stacks of dusty barrels covered with cobwebs sink into the gravel floor. This is where the slow magic happens. Back in 2014 Sauvageonne was created by blending lambic from Oud Beersel with beer brewed in the brewery above the barrel stacks. Since that time, as beer is removed from the barrels, it has been replaced with spontaneously fermented beer from our sour production facility, a.k.a. the Chalet. A system of fractional blending known for its use in the production of sherry is employed in the production of Sauvageonne. This process is called Solera. The hardest part of the process involves removing the oldest beer from barrels and bottling. The oldest beer is stored in the barrels on the bottom of the three high stacks. Beer from the barrels in the middle of the stack are used to fill the now empty barrels. These now empty barrels in the middle of the stack are relled with beer from barrels on the top of the stack. The top barrels are refilled with beer that has been spontaneously fermented.
